Corn and Cucumber Salsa

3 pcs. cooked corn on the cob

1 large cucumber

1/3 c. diet italian salad dressing

1/4 c red onion, chopped

2 T fresh cilantro, chopped

1/4 tsp red pepper flakes

Cut corn kernals off cob. Youcan use frozen corn if desired. Cut cucumber in half length wise, seed it, and slice into 1/2 inch thickness. Combine all ingredients in a small bowl. Serve chilled or at room temperature.

Quick Punch

1 12 oz. can frozen Dole pineapple orange juice

1 12 oz. can frozen lemonade

2 2 liter bottles chilled ginger ale

1 bag ice

1 lemon sliced for garnish

2 limes sliced for garnish

For a normal reception or party, makes two batches, droubling the ingredients. Do not dilute the juices with water. The ginger ale and ice provide that function. The ice will last longer if you chill the ginger ale before mixing the punch.
